This week I'm eating...

I've gone fortnightly on the Boston Organics box - I just wasn't getting through all the yummy fruit and veg quickly enough.  So this fortnight it's broccoli, sweet potato, spring onions, lettuce, brussel sprouts and butternut pumpkin.  For fruit I have apples, banana, kiwi (not local) and oranges.  

I'm also asking for help.  I am hopeless at eating lettuce.  I still have 1.5 lettuce heads in my fridge.  I'm asking for creative ways so introduce lettuce into my diet.  I looked in Stephanie and she had a suggestion for soup, but frankly I wasn't sold.  Ditto for oranges.  They are slowly collecting in my fridge door.  No points for telling me to juice the oranges, that's too easy and you don't get the goodness of the pulp!  I might hand out bonus points for combining the two ingredients in the same recipe.

Hello again,

I can never resist ann invitation for a recipe. Orange and kiwi fruit salad [ both cut in rings with skin and pith well and truly removed] with cointreau, and a bit of sugar syrup if the fruit is tart. The original recipe was from the Women's Weekly and had strawberries as well, but orange and kiwi is fine.

I don't hold with orange and lettuce in the same dish...and lettuce is hard. Dry fried disks of sweet potato, spanish onion, and a soft cheese[or labna] along with lettuce and a french dressing makes a sustaining winter salad.

Have you thought of getting a guinea pig? They like lettuce, and I am sure they would give the brussel sprout stalk a go.

i was going to say san choi bow as well. or.... the only other thing i can think of with lettuce is tacos or enchiladas. or some other form of wrap type food. tricky...

I think you can have a salad of leaves dressed with olive oil and salt and some very finely sliced orange, peel and white stuff removed, maybe some toasted almonds as well? I think the Thai put lettuce in stirfry, but goes a bit limp really.
